Ingredients
150 gm Self Raising flour |
50 gm sugar |
1 tsp ground cinnamon |
¼ tsp ground ginger |
150 gm Devondale Dairy Soft Butter (melted) |
100 ml maple syrup |
2 eggs |
1 tsp vanilla extract |
2 green apples (medium) small diced |
2 carrots grated |
1 tbsp brown sugar |
1 additional green apple finely diced |

Directions
- Preheat oven to 185°C
- Line a 12 hole muffin tray with paper muffin cups
- Mix flour, sugar, cinnamon and ginger together in a large bowl
- In a separate bowl, mix melted butter, maple syrup, eggs and vanilla with a whisk until blended
- Add to the wet mix, the apples and carrots and stir well
- Fold wet mix into the dry mix until just combined
- Divide the mix into the 12 paper cups
- Mix brown sugar and finely diced apple and garnish with a small mound on top
- Bake in oven for 25-30 minutes
