Apple, Carrot andMaple Syrup Muffins


Ingredients

150 gm Self Raising flour
50 gm sugar
1 tsp ground cinnamon
¼ tsp ground ginger
150 gm Devondale Dairy Soft Butter (melted)
100 ml maple syrup
2 eggs
1 tsp vanilla extract
2 green apples (medium) small diced
2 carrots grated
1 tbsp brown sugar
1 additional green apple finely diced


Directions

  1. Preheat oven to 185°C
  2. Line a 12 hole muffin tray with paper muffin cups
  3. Mix flour, sugar, cinnamon and ginger together in a large bowl
  4. In a separate bowl, mix melted butter, maple syrup, eggs and vanilla with a whisk until blended
  5. Add to the wet mix, the apples and carrots and stir well
  6. Fold wet mix into the dry mix until just combined
  7. Divide the mix into the 12 paper cups
  8. Mix brown sugar and finely diced apple and garnish with a small mound on top
  9. Bake in oven for 25-30 minutes
