Funfetti cookie Sandwiches

The name says it all, these fun-filled cookies will add a pop of colour to the party and put smiles on faces.


Ingredients

1 ½ cups plain flour
½ tsp cream of tartar
½ tsp bicarbonate soda
¾ cup caster sugar
120g Devondale Unsalted Butter melted, cooled
1 tsp vanilla extract
1 egg, lightly beaten
4 tbsp 100's and 1000's
250g Devondale Unsalted Butter softened
3 cups icing sugar mixture, sifted
2 tbsp Devondale Full Cream Fresh Milk


Directions

  1. Get an adult to help you preheat an over to 180°c. Grease four large baking trays and line with baking paper.
  2. Sift flour, cream of tartar and bicarbonate of soda into a large bowl. Stir in caster sugar. Add butter, vanilla and egg. Mix well to combine. Stir in 100's and 1000's
  3. Roll two level teaspoons of mixture into a ball. Place on one of the prepared trays. Repeat with remaining mixture, placing each ball 5cm apart on trays. Flatten sligtly then top with extra sprinkles.
  4. Bake biscuits, two trays at a time, for 10 minutes or until just firm to touch, but not browned. Cool on trays 5 minutes then transfer to a wire rack, lined with baking paper to cool.
  5. Using an electric mixer, beat the butter in a bowl until pale. Gradually add icing sugar mix and milk, beating constantly until combined. Sandwich icing between two cookies to make a Funfetti Cookie Sandwich.
