Ingredients
1 large sweet potato, sliced into thin wedges |
2 tbsp olive oil |
2 rashers bacon, diced and cooked |
1 cup Tasty Shredded Cheese |
2 tbsp spring onions, chopped |

Directions
- Preheat oven to 180°C, arrange wedges on an oven tray and drizzle with olive oil. Top with bacon and cheese and bake for 20 minutes until cheese is melted and sweet potato is soft and cooked through.
- Remove from oven, sprinkle with spring onion and serve.
