LunchboxBacon, Zucchini and Pumpkin Slice


Ingredients

250 gm bacon diced 1cm
400 gm pumpkin peeled and diced 1 cm
6 eggs
100 ml Devondale Full Cream Long Life Milk
2 zucchinis grated
1 tbsp Devondale Dairy Soft Butter
150g Devondale 3 cheese blend 
Fresh parsley
Fresh thyme


Directions

  1. Preheat oven to 165°C
  2. In a 22 cm ovenproof frypan on a medium to high heat, add the butter and the bacon and cook until crispy.
  3. Then add the pumpkin and zucchini and mix. Cook until everything is hot .
  4. In a small bowl, mix the eggs, milk and cheese and season then pour this into the pan and carefully move the pan into the oven for 40 minutes.
  5. Serve warm with a salad or cut up for lunches
