White Chocolate Mousse


Ingredients

150g white chocolate, chopped
4 egg whites
⅓ cup caster sugar
160ml Devondale Long Life Thickened Cream
100g raspberries (fresh or frozen)


Directions

  1. Place chocolate in a heatproof bowl over a saucepan half filled with simmering water and stir until melted. Remove from heat.
  2. Beat egg whites in a clean, dry bowl to firm peaks. Add half the sugar and beat until the sugar dissolves. Continue to add the remaining sugar and beat until glossy. Combine with cream and beat until the mixture thickens. Fold in the melted white chocolate, using a metal spoon, until just combined.
  3. Divide mixture between 4 serving glasses, chill to set for approximately 30 minutes and serve with raspberries and a little shaved chocolate.
